Here’s the recipe for our popular homemade rocky road! We used some dried ingredients we had on hand.
We mixed together a handful each of cranberries, hazelnuts, walnuts, freeze-dried raspberries, chopped macarons and chopped merengues, all roughly chopped. You can adjust the proportions to your liking, as long as you use only dry ingredients (no fresh fruits).
Use melted chocolate to bind everything together.
- Melt the chocolate
- It’s crucial to cool down the chocolate to skin temperature before adding the dry ingredients
- Pour the mixture onto a sheet of greaseproof paper and pack it down firmly.
- Refrigerate for 30 minutes to allow the chocolate to set, which is essential.
Once it’s set, you can store it in a airtight container in the cupboard for up to 3 months, thanks to the Bennetto chocolate home tempering method.
